Tomato Soup

Boil 500gms Tomatoes, 2 onions and 4 peeled garlic flakes with 5 cups of water in a pressure cooker . Cook till 4 to 5 whistles of the cooker. Let it cool, then blend it in a mixer and strain it in a vessel. Put 1 tsp of sugar in it and boil it once. Add salt and pepper to taste. Garnish it with fried bread pieces. Serve and drink hot.

Kulfi Falooda

For Kulfi:

Boil 1 litre whole milk till it gets reduced to half its quantity. Add 1 tsp of cornflour or custard powder to a little cold milk, mix it well and add it to the boiling milk. Put off the gas, then add tsp rose water, 5 tbsp sugar, 1 tsp china grass to the milk, beat it well and let it cool. Then beat it in a mixer for 5 mins and put it in the freezer.

For Falooda:

Take 2 tsp (20 gms) of cornflour and 2 tbsp (200 gms) of colouring essence, heat it on a slow flame for 5 mins., the put off the gas and let it cool. Then take some cold water in a big vessel and hold the mixture over a strainer, noodles will fall in the cold water. Remove these and put them on the Kulfi while serving chilled.

Jam Tarts

Sieve 1 cup maida and tsp baking powder together. Then add 1 tbsp powered sugar and 2 tbsp butter to it . Knead it well using cup water. Put it in greased pastry moulds (thin cup like layer) and put mixed fruit or any flavoured jam in it. Roll out a thin layer of maida dough and cut out thin strips. Arrange these strips over the jam in whichever pattern you like. Bake it for 20 mins. At 200 degree centigrade. Enjoy when cooled.

Chikoo Milkshake

Take 4 ripe chikoos, peel, cut and deseed them. Add around litre milk ( can be varied according to desired thickness ) Add sugar as per taste and blend in a mixer till frothy. Serve chilled with a layer of fresh cream on

Note: the chikoos can be substituted with other fruits.
